1) In 2v2, how come +1 attack for Goliaths is so important to get when it is ZT vs ZT? In all the replays I've seen, both teams go 3 Factories with +1 attack for their Mass goliath army. It probably helps vs Goliaths and Mutalisks? Does it allow for one less hit to kill them or something?

2) Is +1 armor worth it to get against Sunken Colonies or Photon Cannons? If your Marines have full health, they will be able to take an extra hit against those and break them. However, most of time they are stimmed... +1 Armor also gives extra hit vs DT's and Lurkers, does it help with anything else?

3) Why do players make +1 attack for Hydralisks when they are fighting Mutalisks? In 2v2, I sometimes see a Zerg players going +1 carpace because it gives the Hydralisk an extra hit to take against Sunken? Why and when do you decide between the two?

+1 damage upgrade for goliath gives you 15,4% advantage vs mutalisk while +1 armor gives only 11,1%.
vs goliaths +1 dmg up +8,33%, +1armor +7,7%.

2) i guess so.

I made a complete table with all units that shows which one is better in certain situations + 1 dmg or +1 armor upgrade.
But that pc of mine isnt functioning.

3) i guess its cheaper. +1 armor should be better since it greatly reduces bounce-hit damage. Also better vs zergling and marine.

A ling must hit 17 times to kill hydra, with +1 armor it is 21. (+19%)
while hydra must shoot ling 8 times to kill, with +1 it is 7. (+12.5%)
same with marine 14->17(+17,6%) and 8->8 (0%)

positive values mean armor, negative is damage, 0 is equal, x none of upgrades give advantage.
- is i didnt care of it.

+50 = attack upgrade gives absolutely no advantage, -50 is the same with armor.
x both make no sense.

For zerg ground units, it's almost always better to go +1 carapace, since you're benefiting both zerglings and hydralisks. When choosing attack upgrade, you must choose either to upgrade attack for zerglings or hydralisks, not both.
